If you are importing food-grade Himalayan salt, the certificate of analysis is the document that tells you whether what you are receiving is what you ordered. Most buyers glance at it and file it away. Buyers who have had a shipment rejected at customs, or who have received a complaint from a downstream client about quality, learn very quickly that they should have read it more carefully.
Here is how to read one properly.
What a Certificate of Analysis Is
A certificate of analysis, often abbreviated CoA, is a document issued by a laboratory — ideally an accredited third-party lab — that reports the measured values of specific parameters for a given batch of product. It is tied to a specific production lot or batch number, not to the supplier in general.
A CoA from a reputable supplier will list the testing laboratory’s name, accreditation number, the date of testing, the batch number it applies to, and a list of tested parameters with results and reference limits. If any of these elements are missing, ask why.
The Parameters You Should Check
Heavy metals are the first thing to look at for any food product. The parameters typically tested include lead, arsenic, mercury, and cadmium. The EU maximum limits under Regulation 1881/2006 are strict, and some markets like Germany have additional national standards on top of EU minimums. If the CoA shows results close to the maximum limit for any of these, ask for the method of testing and the lab’s measurement uncertainty. A result of 0.09 ppm where the limit is 0.10 ppm leaves almost no margin for variability.
Sodium chloride purity tells you what percentage of the product is actually salt. Himalayan pink salt typically runs between 95% and 99% NaCl. The remaining percentage is trace minerals and naturally occurring moisture. If purity is below 95%, the batch has unusual mineral content or has been adulterated.
Moisture content is more important for processing and storage than for safety, but it affects shelf life and caking behavior in fine grain products. Most specifications call for less than 1% moisture on food grade salt. Above that and you will have clumping in retail bags, especially in humid climates.
Microbiology results cover total plate count, coliforms, E. coli, Salmonella, and sometimes mold and yeast. Salt is inherently hostile to microbial growth, so these numbers should all be well within limits. Any detectable E. coli or Salmonella is a fail regardless of quantity.
Heavy metal testing beyond the basic four — if the destination market requires testing for chromium, nickel, or other metals — will appear in this section. Confirm with your regulatory team which parameters your destination market requires before ordering.
The Batch Number Connection
Every CoA should correspond to a specific batch number that also appears on the product packaging and shipping documentation. If you receive a shipment and the CoA batch number does not match the batch numbers on the bags, you have a traceability gap. This matters if a recall or quality complaint ever arises — you need to be able to trace every unit back to a specific test result.
Ask your supplier to confirm the batch number alignment before the container ships. Reputable exporters do this as a matter of course. It should not require a special request.
Red Flags to Watch For
A CoA with no lab name or accreditation number is not a CoA — it is a supplier-generated document claiming to be one. These have no third-party verification and are not acceptable for regulated market entry.
Testing dates that are many months old suggest the CoA was generated for a previous batch and is being reused. Fresh CoA documentation should reflect testing from the current production run, typically within 30 to 60 days of shipment.
Results that show exactly the same number across multiple batches — for example, a heavy metal result of 0.005 ppm appearing identically on every CoA over six months — suggest the results are being copied rather than tested. Real testing produces slight variation even from the same source material.
Getting comfortable reading a CoA takes one or two careful readings. After that it takes five minutes to check a new one properly. That five minutes has prevented more than a few expensive problems for buyers who made it a habit.
